Country Peach Tart

Tarts are the perfect dessert choice when time is of the essence. Easy to prepare, they can be made using any fruit you happen to have on hand.
Ingredients

1⁄2 cup peach preserves

2 tablespoons water
-
4 large ripe peaches, peeled and sliced

2 tablespoons brown sugar

1 teaspoon cardamom
-
1 teaspoon freshly squeezed lemon juice

1 (9-inch) pie crust, store-bought or homemade

2 tablespoons butter (optional)

2 tablespoons heavy cream or milk

2 tablespoons sugar

Confectioners’ sugar, for dusting
Instructions

Preheat oven to 400 degrees F.

In a medium saucepan over medium-low heat, combine the peach preserves and the water; heat until spreadable. Let cool slightly.

Toss the peaches with the brown sugar, cardamom, and lemon juice.

On a well-floured work surface or wax paper, roll out the pie crust to make a 12-inch circle or rectangle. Transfer to a baking sheet and coat evenly with preserves to about 2 inches from the edge of crust. Mound the peach slices on top of preserves, still maintaining the 2 inches of border around the peaches.

Fold the dough up over the peaches, forming a nest and leaving the center exposed. Brush the exposed crust with the cream and sprinkle with the sugar. Bake for 30 minutes then allow to cool for at least 15 minutes before serving.

Serve with a dusting of confectioners’ sugar.
